Lean Pork & Prawn Fried Rice

Ingredients

  • 200g pork mince
  • 8 Peeled raw prawns
  • 100g Frozen peas
  • 1 tbsp Grated ginger
  • Red chilli
  • 2 Eggs
  • 300g Brown rice, cooked
  • 2 Carrots
  • 2 Garlic cloves
  • 2 Spring onions
  • 1 tbsp Light soy sauce

The Magic Method

Step 1

Get your Lean Pork & Prawn Fried Rice underway by peeling your carrots and dice them into small chunks.

Step 2

Slice your red chilli and spring onions as finely as you can, peel and mince your garlic cloves and put all these to one side.

Step 3

Heat a large pan (preferably non stick) with a few sprays of Frylight over a medium heat, then crack in the eggs and scramble until cooked. Set these aside.

Step 4

Add a few more sprays of Frylight into the pan. Add your pork mince and carrots and fry until cooked.

Step 5

Add the garlic and ginger then mix together.

Step 6

Remove the pork and carrots from the pan, then spray some Frylight, add your prawns to the pan and cook for 2-4 minutes until pink. Once cooked remove the prawns.

Step 7

Next, add your cooked brown rice and frozen peas. Fry for 3-5 minutes until the rice is browned and the peas are warmed through.

Step 8

Add the prawns, pork and egg back into the dish and heat through with your soy sauce.

Step 9

Serve your Lean Pork & Prawn Fried Rice with sliced red chilli and spring onions to add a fresh and spicy crunch.
